Black Earth Ribs

  • Get a couple racks of pork ribs – spare or baby back.
  • Season them with your favorite rub.
  • Preheat the grill for 10 minutes.
  • Set the wood pellet control to 300F and cook the ribs for one hour, bone side down.
  • Turn the wood pellet control off and turn the gas on low.Wrap the ribs in tin foil and add half a cup of apple juice to each package. (Make sure there are no leaks).
  • Cook for one hour flipping the packages every 15 or 20 min so the bottom side doesn’t burn to the tin foil.
  • Take the ribs out of the packages, sauce them up.
  • Caramelize the sauce for 15 min
  • Devour.
